A traditional, very lean, Italian cooked deli meat made from the pork muscle that runs from where the shoulder meets the neck and aged between six months to a year. This product is dry cured for a short time to draw out moisture and intensify the flavour. It’s rubbed with herbs and spices for added savouriness, and then chili pepper for added heat. The flavour is intense and savoury. This product is pre sliced and packaged for your convenience.
