Description

Bresaola is made from the leg of beef that has been thoroughly defatted and seasoned with salt and spices, cured and then air dried for one to three months. The flavour is intensely savoury with a delicate sweetness. It is best served sliced paper-thin with a generous drizzle of extra virgin olive oil, arugula lettuce, shavings of Parmigiano Reggiano cheese, and a squeeze of lemon juice.
