Hard cow’s milk cheese with walnut sized holes and a sweet aroma with tones of fresh-cut hay. It is characterized by its “eyes” or small holes present throughout the center of the cheese. The flavour is fruity yet slightly acidic and the texture is supple and firm but slightly creamy. Emmentaler is an excellent cheese for fondue, where it becomes even richer, creamier and wonderfully stretchy when melted. Grate this cheese into recipes, melt over gratin dishes, or cut into cubes and enjoy as a snack with fruit, crackers and toasted nuts.
