EMMA® Ricotta Salata
A hard sheep’s milk cheese made from the whey part of the milk that is pressed, salted, and then aged for approximately 90 days. The texture is dry, and crumbly with an intesly savoury flavour. The colour is a pure milky white, thanks to the absence of external factors that can influence colour change in cheese. This cheese is often grated into recipes, it’s grated over pasta, and shaved over salad, all to add a salty depth to the dish.
