A traditional, very lean, Italian cooked deli meat made from the pork muscle that runs from where the shoulder meets the neck and aged between six months to a year. This product is dry cured for a short time to draw out moisture and intensify the flavour. Our version is well seasoned with black pepper and garlic giving it an intensely savoury flavour.
