Il Forteto Pecorino Renero

Sheep’s milk cheese aged for at least three months. The black rind represents the peasant’s custom to protect the cheese greasing it with olive-oil’s dregs and ashes to extend the conservation. Hard but light texture, very sharp and complex flavour.
