Produced on the island of Faial nestled in the center of the Azores archipelago, this cow’s milk cheese acquires its name from its breathtaking surroundings: a plentiful landscape of blooming hydrangeas in the summer months. Ilha Azul, a name for the cheese as well as the island on which it is produced, translates to “blue island” and represents a longstanding tradition of artisanal cheesemaking. With a medium-soft texture, and creamy yet mild flavour, Ilha Azul is a delicious and approachable cheese perfect for melting into recipes, or as part of a cheeseboard.
